Brother Lin's Beef Noodle Soup (Lanzhou-inspired)

My brother, Mike, is my biggest supporter when I decided to open Lin & Daughters so I named this soup in his honor. The broth is made by simmering beef bones in herbs and spices for many hours to extract the beef essence. The braised beef briskets are deliciously saturated with spices and herbs. I find it to be a comforting soup that I enjoy eating year round, but especially during the colder seasons. Note: this noodle soup is not a faithful recreation of any traditional recipes. It leans toward Lanzhou style but with my own twist.

Supposedly invented in San Francisco by a Vietnamese American chef, it beautifully fuses the flavors of the East and West. Enjoy with bok choy, or add shrimp for extra umami and sweetness.
